Custom Cut Sheets: What to Know Before You Decide

Now that you’re ready to dive into your custom cut sheet, here are a few important things to keep in mind.
Lower Boxed Weight Isn’t Always a Bad Thing
A lower boxed (or take home) weight can actually be a positive, depending on your goals. It can:
Reduce the amount of freezer space you need
Minimize waste from packaging and cardboard
Ensure you only take home cuts you know you’ll use and enjoy
Choices That Reduce Boxed Weight
If your priority is efficiency and simplicity, the following options will lower your final take-home weight:
Opt for more ground beef instead of whole cuts. Removing bones and excess fat reduces overall weight. Not interested in shank or large roasts? Choose to have it ground.
Choose boneless roasts and steaks
Skip soup, knuckle, and marrow bones
Opt out of tallow
Decline offal (organ meats like liver, heart and tongue)
Per WSDA guidelines, we unfortunately cannot resell or repurpose any items you opt out of. Rest assured, they will be composted and returned to the land as fertilizer (and occasionally enjoyed by the local wildlife like dogs, eagles, and hawks).
On the Other Hand…
If your goal is to maximize your return on investment (ROI) and get a little adventurous in the kitchen, consider keeping some of these often-overlooked cuts:
🦴 Knuckle & Soup Bones
Perfect for making rich, nutrient-dense bone broth. You can pressure can it or freeze it in vacuum-sealed pouches for soups and recipes all year long.
🦴 Marrow Bones
Simply roast with a bit of sea salt and pepper, then scoop out the marrow for a decadent spread—best enjoyed on a warm, crusty baguette.
🍲 Oxtail
Oxtail adds incredible depth of flavor to dishes. Try it in a hearty chili or slow-cooked stew for the ultimate comfort meal.
🧈 Tallow
Rendering tallow does take time, but the payoff is worth it. Use it for sautéing, frying, or even DIY projects like soaps, lotions and balms.
❤️ Offal (Organ Meats)
When prepared properly, offal can be incredibly delicious and nutrient-rich. Think tender lengua tacos or finely chopped liver blended into ground beef for a nutritional boost.
Even if it’s not your preference, organ meats can also be a special treat for your dog—just be sure to consult your veterinarian first. As with anything, moderation is key.
