Who We Are

Windy N Custom Butcher is a true labor of love for the Newhall family. Since 2006, we’ve raised livestock on our small piece of paradise in Ellensburg, Washington. In 2020, rising processing costs and long wait times pushed us to take action—not just for ourselves, but to support local ranchers and keep high-quality, locally raised food accessible to our communities.

So, we built our own butcher shop from the ground up and opened in May 2021. Since then, we’ve grown into a fully USDA-inspected operation, offering WSDA, USDA, and wild game processing. Today, we’re proud to also feature a variety of ethically raised meats sourced directly from Washington family farms—bringing the best of our region straight to your table.
