Windy N Ranch in Ellensburg, WA, is the home farm of Windy N Custom Butcher, both proudly owned and operated by the Newhall family.
For more than 20 years, we’ve been raising 100% grass fed and finished beef, lamb, and goat, along with pastured pork, chicken, Thanksgiving turkeys, and truly free-range eggs—right here in our beautiful valley.
Over the years, our commitment has remained the same: to produce the highest-quality meats through humane animal care and regenerative farming practices. Every product we offer is thoughtfully raised on Certified Organic pastures and exclusively available through Windy N Custom Butcher.
JR Ranch
Jeff Schmidt of JR Ranch knows a thing or two about raising cattle. He’s been at it since he was just a boy growing up on his parents’ small farm. Today, alongside his family, he runs his own outstanding operation in Othello, Washington.
There, his 100% grass fed and finished cattle graze across wide-open acres of vibrant pasture during the growing season, with high-quality baled hay sustaining them through the winter months. Their diet is diverse; they may be munching orchard grasses one day or filling up on turnip and radish greens another.
His herds are rotated daily, ensuring they’re always feeding on the most nutrient-rich forage while giving the land time to rest and regenerate. While his fields aren’t Certified Organic, he takes a natural approach, avoiding nitrogen-based fertilizers and instead letting the cattle contribute to the health of the soil in their own way.
His passion for ranching, along with his deep commitment to animal health and well-being, is obvious, and it shines through in the outstanding quality and flavor of his meats.
Pure Country Harvest
Owned and operated by the Klingeman family, Pure Country Harvest is a rare gem in Washington’s grain-finished cattle and pork industry.
Surrounded by wide stretches of lush green pasture, their livestock are given plenty of space to roam, with constant access to fresh water and wholesome feed customized to support healthy growth. Cattle are pasture-raised most of their lives, grazing naturally until they reach about 950–1,000 pounds. From there, they spend roughly 150 days finishing on a carefully crafted blend of non-GMO corn, wheat, triticale, barley and peas.
What truly sets the Klingemans apart is their deep commitment to collaboration. They work closely with neighboring farms and ranches—sourcing feed grains locally and partnering with fellow producers to raise livestock—strengthening both quality and community.
Their reputation for exceptional Angus beef and pork speaks for itself, delivering flavor and quality that rival even the finest high-end steakhouses.
